Trays, racks, coatings, seals and accessories need material-specific evidence linked to intended food, time and temperature conditions.

Map every contact pathway

Food can touch more than the main tray. Review racks, baskets, crumb trays used for cooking, rotisserie parts, probes, silicone seals and removable accessories. Also consider foreseeable contact with grease, steam and condensate. The material list should identify substrate, coating and supplier—not only a generic name such as stainless steel or nonstick.

Match evidence to intended use

Migration and suitability depend on material, food type, temperature, duration and repeated-use conditions. A declaration for cold storage packaging does not automatically support high-temperature oven use. Buyers should ask which regulation and test conditions were used and whether the tested sample matches the production bill of materials.

EU framework

Regulation (EC) No 1935/2004 sets general safety and inertness principles for food-contact materials. The European Commission also states that food-contact materials should be manufactured under good manufacturing practice, with specific rules applying to certain material groups. National rules can remain important for materials without fully harmonized EU measures.

Build a controlled file

Keep supplier declarations, material specifications, test reports, lot or grade identification and change-notification commitments together. Recheck the evidence when the coating supplier, formulation, substrate, thickness or manufacturing process changes.
